Warm up with this pair of fall cocktails created by Ruby Watchco

Ruby Watchco is not your typical restaurant. And that's why chef Lynn Crawford's Riverside digs — offering a nightly four-course prix-fixe menu of seasonal Canadian cuisine — has become a fixture of Queen East since opening over six years ago. 

Here, general manager Mary Stewart and bartender Ben Arbour, share two cocktail recipes inspired by the cool weather.

THE GEORGIAN MANOR

Gin and Aperol make for good friends, and with The Georgian Manor, their layered herbal elements balance each other out with refreshing lemon and plum. 

METHOD

Muddle plum segments and 1 sprig of thyme
Add wet ingredients in shaker-tin
Fill with ice
Shake for 14 seconds
Fine strain into a chilled coupe glass
Serve garnished with sprig of thyme

INGREDIENTS

2 oz. Georgian Bay Gin
¾ oz lemon juice
 ¾ oz plum simple syrup
¼ oz Aperol
1 Ontario prune plum, Sliced
Thyme
3 dashes Dillon’s Bitter Orange

How to make plum simple syrup

2 cups plum pits
2 cups sugar
1 L water
Bring to a boil
Simmer 30 minutes
Strain and refrigerate

RUBY'S OLD FASHIONED

Ruby's Old Fashioned gives the classic cocktail a modern makeover.

METHOD

Mix wet ingredients in mixing glass with ice
Stir for 20 seconds
Strain into an ice filled rocks glass
Express an orange peel over glass and drop in glass

INGREDIENTS

2 oz. Bulleit Bourbon
Short ½ oz. apple simple syrup
2 dashes Angostura bitters
8 drops Coffee & Smoke Bitters

How to make apple simple syrup

4 cups sugar
4 cups water
3 apples, roughly diced
1 tsp. all-spice
4 pieces of clove
Bring to a boil
Simmer 45 minutes
