Rorschach Brewing launches craft brewery and pub set in 100-year-old mansion

Rorschach Brewing has launched in Toronto's east end in a century-old mansion on the western edge of Woodbine Park.

The brewpub, which occupies the former space of Le Papillon on the Park, is outfitted with a tap room, dining room and patio space on the second floor. Of course, there's also the brewery itself, which is in plain sight of the entire space. 

Rorschach Brewing will eventually feature up to 18 beers on tap brewed on-site in a 10-barrel brewhouse with six fermenters and two bright tanks. The brewpub's focus is creating "craft beers that are both full of flavour and make us want to have another."

The current lineup is heavy on saison styles with a table saison and wheat saison, plus three different IPAs and a coffee oatmeal stout.

A food menu is focused on  sharing plates meant to complement the beer and includes snacks like tacos, wings, skewers, calamari and fries. 

One-litre takeaway growlers of any of the beers are available with bottles to come soon.
